The Renaissance Gourmet No-Bake Tiramisu
The Renaissance Gourmet’s No-Bake Tiramisu
We LOVE this easy dessert…my husband begs me to make it and the guys devour it so fast each time. Mouth-wateringly delicious and simple to make, it combines cream cheese and whipping or heavy cream to a rich and creamy substitute for expensive mascarpone cheese. This dessert is fast to make, easy enough for a weeknight and elegant enough to impress at a dinner party!
Ingredients
3 tablespoons instant coffee
3 tablespoons hot water
1 ½ cup cold water
400g Cream cheese
1 cup Heavy cream (or whipping cream)
½ cup icing sugar (confectioners sugar)
2 teaspoons Vanilla extract
Dash of cinnamon
2 packages of Ladyfingers
Method
1. Boil some water. Place instant coffee in a medium bowl. Add in 3 tablespoons boiled water and stir. Pour in 1 ½ cup cold water and stir to combine. Set aside
2. Place cream cheese in a stand mixer and using paddle attachment on medium low, blend to soften. Gradually add in heavy cream on medium low until combined. Once combined, increase speed to medium and mix until begins to thicken. Add in sugar, cinnamon and vanilla continue to mix until fluffy and starts to produce peaks. Set aside.
3. In a 12-cup glass or clear plastic bowl, place 3 tablespoons of cream cheese mix and spread on the bottom.
4. One at a time, dip ladyfingers into the coffee mix (3-4 seconds only or they will fall apart) and place in a row on top of cream cheese. Add another layer of cream cheese (increasing # of tablespoons as needed to cover ladyfingers). Continue to layer. Last layer should be a thicker layer of the cream cheese mix. Chill for at least 30 minutes before serving. Sprinkle with cocoa powder and optionally grate chocolate on top for presentation points! Add a little mint sprig for that little finishing detail.
